INGREDIENTS:
· Strozzapreti - 150 gm
· Chopped Onion - 10 gm
· Chopped Celery - 5 gm
· Chopped Garlic - 3 gm
· Thyme - 0.5gm
· Elle & Wire Cooking Cream - 60 ml
· Portobello Mushroom - 20 gm
· Shimeji - 10 gm
· Porcini Mushroom - 5 gm
· Porcini Water - 30 ml
· King Oyster - 20 gm
· Parmesan - 8 gm
· Gorgonzola - 10 gm
· Truffle Oil - 1 gm
· Butter - 7 gm
· Extra Virgin Olive Oil - 10 gm White wine - 20ml
· Salt - To Taste
METHOD:
- Heat oil and sauté the onions, celery & garlic till it is translucent in colour
- Add the mushrooms along with thyme and sauté
- Deglaze the pan with white wine. Cook off the alcohol and add cream.
- Blanch the pasta and add it to the pan. Add the porcini water to it.
- Finish with butter, parmesan & truffle oil.
GaGarrnish with Gorgonzola crumble and drizzle with some extra virgin oliveoil.
