Straight froma Kashmiri kitchen, here's a rogan josh recipe that has meat stirred along witha host of numerous aromatic spices and herbs, mixed with curd and pressurecooked till tender
Ingredients:
• kg lamb, cut into pieces
• large onions, finely sliced 2tomatoes, pureed
• 1/2 cup yogurt
• tbsp oil or ghee
• 2 tbsp ginger-garlic paste 1 tspcumin powder
• 1 tsp coriander powder
• 1/2 tsp turmeric powder 2 tsp redchili powder
• 1 tsp fennel seeds
• 4-5 green cardamom pods 2-3 cloves
• 1-inch cinnamon stick Salt to taste
• Fresh coriander for garnish
Recipe:
1. Heat oil or ghee in a pan. Add fennelseeds, cardamom, cloves, and cinnamon. Sauté for a minute.
2. Add sliced onions and cook untilgolden brown.
3. Add ginger-garlic paste and sautéuntil the raw smell disappears.
4. Add lamb pieces and brown them on allsides.
5. Mix in cumin powder, corianderpowder, turmeric, and red chili powder. Cook for a few minutes.
6. Add tomato puree and yogurt. Stirwell and cook for 5-7 minutes.
7. Add salt and enough water to coverthe meat. Bring to a boil, then reduce heat, cover, and simmer until the meatis tender.
8. Garnish with fresh coriander andserve hot with rice or naan.
