Gongura Mamsam
Hot Andhra Mutton Curry, reputed to be one of the spiciest recipes
Ingredients:-
250 gms mutton
For mutton margination:-
5 gms Turmeric powder
Salt to taste
5 gms ginger garlic paste
For the curry:-
10 ml refined oil
6 pcs cloves
1 cinnamon stick
3 green cardamom
3 gms cumin seeds
45 gms onion
5 gms ginger garlic paste
100 gms gongura leaves (red sorrel leaves)
10 gms red chilli powder
5 gms coriander powder
3 gms turmeric powder
10 pcs curry leaves
6 slit green chillies
Coriander leaves
50 ml water
7 gms salt
For garnish:-
5gm ghee(clarified butter)
Whole red chilli
Curry Leaves
Method:-
- Marinate the mutton with the mentioned ingredients for at least 30 mins
- Add oil in a pan, add all the whole spices, sauté till they release its aroma,
- Add chopped onions and cook till they are translucent.
- Add ginger garlic paste, gongura leaves, and red chilli powder, curry leaves, slit green chillies, sauté them nicely, add the marinated mutton and cook till perfection.
- Garnish with fried red chili and curry leaves & top it with ghee.
- Serve with rice or dosa
